I always "cheat"
I add a T of yeast, no matter how promising the starter is.
I’ve finally discovered the secret of bread baking: don’t be afraid to make the dough too wet. Excess flour is what kills bread.
And I can’t recommend this Cook’s Illustrated recipe highly enough: you basically let the dough sit for 18-24 hours, and hardly have to knead it at all. And you cook it in … a dutch oven. Comes out perfect every time.

deep, broad, heavy pan with heavy lid
The keys are that it should be enameled cast iron, and that the lid should fit snugly enough to provide a steam-tight seal. It amazingly duplicates the steam atmosphere of a professional baker’s oven.
